I have found a great cookbook that I am recommending to all of you moms with kids. My girls are pretty good about eating their vegetables, but if I can get them to eat the veggies I serve on their plates and disguise more in the rest of the food...well you just can't beat that! The cookbook is called "Deceptively Delicious" and it is written by Jessica Seinfeld. My friend Sam made chocolate cupcakes for us all today and they were SO good! You would have never guessed they had avocado puree in the batter and cauliflower puree in the frosting. All three girls gobbled them up. Here is the recipe for all you daring enough to try avocado in your cupcakes!
Cupcake Batter
Nonstick cooking spray
1 cup avocado puree
1 1/2 cup milk
2 tsp vanilla extract
1/2 tsp balsamic vinegar
2 eggs whites
2 cup flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
Frosting
1 (8oz) pkg cream cheese
1/2 cup confectioners' sugar
1/4 cup cauliflower puree
2 Tbl vanilla extract
1/8 tsp salt
1) Preheat the oven to 350* Coat 12 cup muffin tin with cooking spray or line with baking cups
2) Beat the avocado puree, sugar, milk, vanilla, and vinegar until smooth. Beat in egg whites one at time, just until Incorporated.
3) Add the dry ingred. and mix until smooth. Divide the batter among the muffin cups. Bake until the tops are lightly browned and spring back to the touch, 15-20 min. Cool completely before frosting them!
4) For the frosting, beat together all the ingred. until smooth. Spread on cool cupcakes.
